Grandma Dames’ Currant Jelly Cookies


·         1 cup butter

·         1 tsp vanilla

·         ½  cup sugar

·         1 egg yolk

·         2 ½ cups flour

·         1 small jar of red currant jelly

·         Vanilla frosting (preferably homemade buttercream)


·         Cream the butter and gradually add the sugar. 

·         Stir in the egg yolk and vanilla into the creamed butter and sugar. 

·         Then add the flour. 

·         Chill the dough for at least an hour

·         Roll out the dough and cut into strips.

·         Bake at 350 degrees, until the cookies are browned.

·         Remove the cookies and fill the centers with the currant jelly.

·         Frost the sides with vanilla frosting — if desired.
